Homemade Strawberry Jam

Homemade strawberry jam
This scrumptious homemade strawberry jam takes only minutes to make and is so delicious!  Why buy store bought jam when you can make your own in 10 minutes and it's cheaper and a million times better?  This jam has no pectin in it, so it needs to be refrigerated and used within a couple of weeks.  Enjoy!
Ingredients:
2 cups of fresh strawberries, hulled and sliced
1/2 cup of sugar* (see note below)
1/4 cup of water
1 tsp fresh lemon zest

Directions:
Wash, hull, and slice your strawberries.  Put them into a saucepan with the water, lemon zest, and sugar.  *Note* add sugar a little at a time and taste as you go.  You may like your jam a little less sweet.  Cook over medium heat for about 10 minutes until jam thickens and reduces.  Mash with a potato masher while cooking to break up big chunks.

Pour into a heat resistant jar (I use a funnel, it's less messy that way) and store in the fridge for up to two weeks.

Do you have to let the jam sit in the fridge for 2weeks before you eat it?

Hull means to remove the stems. :)

Is there anyway to preserve them longer in the freezer? Also will this recipe work in a bigger batch as long as I adjust the recipe? Thanks

Yes, you can freeze this up to 6 months, and make as big a batch as you'd like.
